Chicken Casserole

Chicken Casserole
2 C. cooked rice
2 C. cooked chicken
1 C. chopped celery
1 can cream of mushroom soup
1 can cream of chicken soup
2 hard boiled eggs
1/2 C. finely chopped onion
(saute in butter with celery)
*Put in layers in baking dish. Bake at 350 for 30 min. Cover with potato chips.

Summer Salad

One of our patients made us a salad... it was simply divine! I don't have a specific recipe... so just mix all the following ingredients... and add or subtract whatever you care to!

Summer Salad
Summer lettuce
Shredded cheese
Cubbed ham
Garbanzo beans
Kidney beans
Tomatoes
Sunflower seeds
Craisins
*You could add just about anything to this to make it so tasty!!

My Favorite Enchiladas

Chicken Enchiladas
Boil in water:
1 pkg. chicken breasts
1/2 pkg. taco seasoning mix
(canned chicken works great... especially your own canned!)
Mix together:
1/2 can Del Paso Enchilada sauce (I like mild... otherwise it is pretty spicy)
1 lg. sour cream
1 can cream of chicken soup
2 C. grated cheese
1/4-1/2 pkg. taco seasoning mix
Salt, pepper, and seasoning salt
Add cooked chicken
Spoon into 2 pkg. tortillas.
Put tortillas into a 9x13 pan. (I put some enchilada sauce on the bottom of the pan before I put the enchiladas in)
Put the remainder of the enchilada sauce on top of the enchiladas... as well as grated cheese.
Bake at 350 for 1/2 hr.

Cake Frosting!

My neighbor uses this for her cake frosting.... oh my.... it is next to heaven!

Frosting
1/2 C. heavy whipping cream
3/4 C. sugar
*Use a hand mixer and blend until firm. (It takes about 15 min... it should make peaks)

The Best Sugar Cookies EVER!!!

These are my favorite sugar cookies ever! They are super tasty and so easy to make! They are the sugar cookies that are thick and SO soft! (The dough is delicious too!)

Best Sugar Cookies Ever!
Mix together:
1 C. sugar
1/4 C. shortening
1/2 C. butter or margarine
Add:
2 eggs
1 tsp. vanilla
1/4 tsp. lemon extract
1/8 tsp. ground ginger
Mix into creamed mixture:
2 1/2 C. flour
1 tsp. baking powder
1/2 tsp. salt
*Mix well. Roll dough onto floured surface. Cut into shapes. Bake at 375 for 8-10 min.
Frost and enjoy!

Hey everyone! I wanted to give a little history regarding this blog. I work at the Logan Regional Hospital Cancer Center! I have been working there for a little over 2 years and I love it! It is by far the best job I have ever had! I love everyone I work with. I love our patients! I have met some amazing people!
The strength and courage of the patients and their families is amazing! I feel so blessed to know these people!
I love cooking and thought this would be a fun way to find new recipes and have some new ideas for dinner! (Who doesn't need a little bit of extra help with ideas!)
